Memorial Day Weekend is on the horizon! This means that the start of Summer is coming. So it’s time to take your grill out and prepare delicious Summer staples!

Let’s start with some delicious chicken wings…

 

Smoky Grilled Chicken Wings

 

This recipe can also be adapted to a boneless chicken breast for a healthier option. However, one thing is guaranteed. These smoked grilled chicken wings are a burst of flavor.

What ingredients do you need?

 

1/2 c. Ketchup

2 tbsp. cider vinegar

1 tbsp. dark brown sugar

2 tsp. Worcestershire sauce

1 chipotle pepper in adobo, finely chopped

1/2 c. sour cream

1 lime

1/4 c. Fresh cilantro, chopped

1 oz. feta cheese, crumbled

3 lb. chicken wings (about 36) split

2 tbsp. olive oil

kosher salt

black pepper

4 ears fresh corn, halved

 

What steps do you need to follow?

 

  1. Heat grill to medium-low. In a small bowl, combine the ketchup, vinegar, sugar, Worcestershire, and chipotle.
  2. Place the sour cream in a bowl. Finely grate the zest of the lime on top, then squeeze in juice (about 2 tablespoons). Add cilantro and feta and mix to combine; set aside.
  3. In a large bowl, toss the wings with 1 tablespoon of oil and 1/4 teaspoon each salt and pepper. Brush the remaining tablespoon oil on the corn.
  4. Grill the chicken wings, covered, turning occasionally for 12 minutes.
  5. Place the corn on the grill. Grill the wings and corn, basting the wings with some of the sauce and turning the corn occasionally, until the chicken is cooked through and the corn is slightly charred, 4 to 6 minutes. Serve the corn with the wings, any remaining chipotle sauce and sour cream sauce, for dipping.

Grilled Watermelon Salad with Steak and Tomatoes

 

The combination of charred and refreshing watermelon will enhance the tender strip steak.

What ingredients do you need?

 

1 lb. strip steak (about 1″ thick)

Kosher salt and pepper

3 tbsp. fresh lemon juice

2 tbsp. olive oil, plus more for brushing

1 tsp. honey

1/2 tsp. small red onion, thinly sliced

1 lb. cherry or grape tomatoes, halved

1/2 small seedless watermelon (about 3 lb.)

1 c. fresh mint, leaves torn

1 c. fresh flat-leaf parsley leaves

Chopped, roasted unsalted peanuts, for serving

 

What steps do you need to follow?

 

  1. Heat grill to medium-high. Season the steak with 1/2 teaspoon each salt and pepper and grill to desired doneness, 6 to 8 minutes per side for medium rare. Transfer to a cutting board and let rest.
  2. Meanwhile, in a large bowl, whisk together the lemon juice, oil, honey, and a pinch each salt and pepper. Fold in the onions and tomatoes.
  3. Cut the watermelon into 1/2-inch-thick triangles and cut off the rinds. Brush lightly with oil, then grill until lightly charred, 1 to 2 minutes per side. Transfer to serving plates.
  4. Fold the herbs into the tomato mixture, then spoon on top of the watermelon. Slice the steak, divide among the plates and sprinkle with peanuts, if desired.

Old Bay Shrimp

 

When you don’t know how to prepare shrimp, go for the classic Old Bay seasoning. Just one bite and it will take you to Summer.

What ingredients do you need?

 

1 1/2 lb. shell-on deveined shrimp (16- to 20-ct.)

1 tbsp. olive oil

3 tsp. Old Bay seasoning

1/4 c. Chopped parsley

 

What steps do you need to follow?

 

  1. Heat grill on high. Toss shrimp with olive oil and 1 1/2 teaspoon Old Bay seasoning.
  2. Thread shrimp on skewers and grill until opaque, turning over once, 3 to 5 minutes.
  3. Remove shrimp from skewers and transfer to a large bowl. Sprinkle with parsley and 1 1/2 teaspoon Old Bay seasoning; toss to combine. Serve immediately.

4 scallions

1 tbsp. pickled ginger slices (found in your market’s Asian section)

1 tsp. dark sesame Oil

1/4 tsp. each salt and freshly ground pepper

White from 1 large egg

1 tbsp. Soy Sauce

2 lb. piece salmon fillet (preferably sockeye)

Nonstick spray

6 leaves Boston lettuce

Toppings: wasabi mayonnaise, pickled ginger slices and radish sprouts

Garnish: black sesame seeds

 

What steps do you need to follow?

 

  1. Heat outdoor grill.
  2. Make Burgers: In a food processor, pulse scallions, ginger, sesame oil, salt and pepper until finely minced, scraping down sides of processor bowl once or twice. Add egg white and soy sauce; pulse to blend. Add salmon. Pulse just until very finely chopped but not a paste. Shape into 6 burgers, each about 3/4 in. thick.
  3. Coat burgers with nonstick spray. Grill, turning once, until done as desired (6 minutes for medium-rare, which is preferred).4. Place on lettuce leaves. Top each with wasabi mayonnaise, ginger slices and sprouts; sprinkle with a pinch or two of sesame seeds.

1/2 c. apricot preserves

1 tsp. lemon zest

5 tbsp. lemon juice

2 tbsp. Dijon mustard

2 tsp. fresh rosemary, finely chopped

1 tbsp. olive oil, plus more for rubbing

1 tbsp. prepared horseradish, drained

Kosher salt and pepper

1 shallot, thinly sliced

1 1 1/4-lb. pork tenderloin

2 Gala apples, cored

1 small head green leaf lettuce, torn, or 1 5-oz. package mixed greens

wooden skewers

 

What steps do you need to follow?

 

  1. Heat grill to medium-high. In a small bowl, whisk together the preserves, the lemon zest, 3 tablespoons lemon juice, the Dijon mustard, and the rosemary. Reserve all but 2 tablespoons of glaze.
  2. In a large bowl, whisk together the oil, the horseradish, 2 tablespoons apricot glaze, remaining 2 tablespoons lemon juice, and 1/4 teaspoon each salt and pepper. Add the shallot; toss to coat.
  3. Cut the pork into 1-inch pieces. Cut each apple into eight wedges, then cut the wedges in half crosswise. Thread the pork and apples onto eight 8-inch skewers. Rub with oil and season with 1/4 teaspoon each salt and pepper.
  4. Grill the skewers, turning occasionally, for 3 minutes. Brush with the glaze and continue grilling, turning and brushing occasionally with the glaze until just cooked through, about 3 minutes more.
  5. Toss the shallots and dressing with the lettuce and serve with the skewers and any remaining glaze on the side for dipping.
